Pine Lime Granita
¾ cup caster sugar
1 ½ cup water
2 cups pineapple juice
2 kaffir lime leaves
1/3 cup fresh lime juice
Place sugar, lime leaves and water into a small saucepan over low heat and stir to dissolve.
Remove from heat and allow to cool in the fridge.
Remove the lime leaves and discard.
Add the pineapple and lime juice to the cooled syrup.
Pour into a shallow container and place in freezer fora couple of hours or until firm.
Remove from freezer and break up with a fork to form crystals. Return to the freezer and repeat until granita texture is consistence small icy crystals.
Coconut Shortbread Crumb
200gm packet plain shortbread biscuits
100gm coconut milk powder
¼ cup shredded coconut
Combine all ingredients in a food processor and pulse unit crumb like texture.
Spoon a generous amount of shortbread crumb into serving bowls.
Spoon in granita and top with Coconut Ice-cream.
I used Coyo Simply Vanilla Ice-cream.
