Preheat oven 160°C
Prepare a 30 cm loaf tin with non-stick baking paper.
125g melted butter
1/4 cup melted coconut oil
3 ripe bananas roughly mashed
3 large eggs
1 teaspoon vanilla paste
1 cup plain flour
1/2 cup cocoa
3/4 cup brown sugar
1 teaspoon baking powder
pinch of sea salt
1 cup dark chocolate 70% - roughly chopped
Gentle melt the butter and coconut oil in a small saucepan over low heat.
Combine all wet ingredients into a medium size bowl and slowly stir in the dry ingredients.
Add the chocolate and aromatics. Gently mix to combine.
Do not over mix as this can split the coconut oil.
Pour batter into a prepared loaf tin and bake in preheated oven 160°C for approximately 30 - 40 minutes or until loaf is just set in the centre.
Aromatics I used:
Zest of 1 orange
1 teaspoon crushed fennel seeds
2 sprigs of fresh rosemary finely chopped
