Apple and Berry
2 granny smith apples peeled and sliced.
1 1/2 cup of frozen mixed berries
3 tablespoons caster sugar
Zest and juice of 1 orange
1/2 teaspoon vanilla paste
Fresh Thyme leaves
Place all ingredients in the base of your baking dish. Toss to combine and leave to macerate for 1 hour.
Crust
100gm plain flour
1/4 teaspoon baking powder
Pinch of salt
125gm softened unsalted butter
1/2 cup caster sugar
1 egg
1/2 teaspoon vanilla paste
Fresh thyme leaves
Preheat oven to 190°c.
In a small bowl sift the flour, baking powder and salt, set aside.
Place the butter, sugar and vanilla in the bowl of a electric stand mixer and beat until light and fluffy.
Slowly add the egg and beat until just combined.
Drop spoonful's of batter over the prepared apple and berry mixture.
Trying to achieve a rustic crust cover. Sprinkle with fresh thyme leaves.
Place in preheated oven for 20 minutes or unit crust is golden brown and filling is bubbling.
