BBQ Cauliflower Steaks
1 small head of cauliflower, cut into 1 cm thicksteaks
Extra virgin olive oil
Zest of 1 lemon
Sea salt and pepper
Season cauliflower steaks with EVOO, lemon zest andsalt & pepper.
Allow flavours to infuse.
Grill over medium heat BBQ for 2-3 minutes each side.
Almond Cream
½ cup blanched almonds, soaked in water
½ cup fresh water
Pinch of cumin powder
¼ teaspoon honey
Juice ½ lemon
Sea salt & pepper
Strain almonds and rinse.
Place all ingredients into a high-powered blender until smooth.
If dressing is a too runny slowly add a tablespoon of olive oil to thicken.
Black Garlic Paste
5 Black garlic cloves, sliced
½ brown onion, finely diced
1 tablespoon of butter
Fresh thyme leaves
Melt the butter in a small frypan over medium heat.
Add the garlic and onion and cook unlit translucent.
Add the fresh thyme leaves and remove from heat.
Garnish
¼ cup sliced almonds, toasted
Fresh thyme leaves
Extra virgin olive oil
Place the cauliflower steaks on the serving plate.
Top with black garlic and almond cream.
Garnish with toasted almonds and thyme leaves.
Drizzle with EVOO.
